Remove the driveshafts from the hubs to get the diff out?

Depends on the diff, some just bolt on on iirc, I assume yours don't? even if they slide in you can take the hub of the suspension and remove hub and driveshaft together I think.

1.8 Torsen, bolt on. All the guides tend to be switching a 1.6 for a 1.8 diff, so involve driveshaft removal, but if I can get away with not removing them in a straight diff swap scenario that is ideal!

No, if you have the slide in shafts, you can get the diff out without removing the shafts from the hubs. It's a ball ache (although, not as much as removing the shafts from the hubs can potentially be), but it can be done. Just remove the bolt connecting the upper arm to the hub and pull the hub down - make sure you get the shafts to pop out of the circlip in the diff as you do it, so as not to pull the CV joints apart.
If you have the bolt on shafts, I'm sure it's easier still.
